The flavors of the Philippine archipelago are influenced by various international cuisines and are local, regional, and seasonal. According to the Philippine Culinary Heritage Movement, Filipino food is one of the world’s first fusion cuisines, with ancestral cooking influenced primarily by early foreign visitors such as Chinese, Portuguese, Spaniards, and Mexicans who were active in spice trading, as well as Muslims from neighboring countries.
The month of April is Filipino Food Month, commonly known as Buwan ng Kalutong Pilipino. The theme for this year is Pagkaing Sariling Atin, Mahalin at Pagyamanin. Waterfront Airport Hotel & Casino Mactan took advantage of the opportunity to market a series of meal deals for this month.
Merienda Cena
Filipinos are snackers, and merienda is one of the day’s fourth or fifth meals. Merienda is one of the native food traditions in Filipino culture, owing to the country’s long connection with Spain. Merienda is more than just a light lunch. It is a wonderful relief for the household staff as an indulgence after a long day’s work, or an afternoon refreshment served to neighbors and visiting friends.
Merienda is a sort of meal that is filling but not quite enough to be called a full meal. Weekday Merienda Cena is available at Waterfront Mactan from 2 PM to 5 PM.
Waterfront Mactan’s newly minted Executive Chef June Fernandez went back to fundamentals and gives what is full to the stomach while reminding you of your childhood memories. At the same time, bridging the best of both worlds-comforting and familiar with current versions. The merienda cycle includes breads, kakanins, scalding hot sweet potatoes, and skewered fruits. To name a few, the primary frying station offers squid ball, tempura, fish ball, fried isaw, kwek kwek, lumpia, and okoy. Homemade dipping sauces are offered on the side, and a special mystery spicy homemade hot sauce will appear on occasion to provide diners with an exclusive taste. Cool sago’t gulaman and ice candies alternate with hot sikwate (local chocolate) or roasted corn coffee.
Mamen at Kadaugan Sa Mactan
Femia Casabuena, the restaurant’s sole female chef, is famous for her hand-pulled noodles. Her cooking skills were on display at Cafe Uno’s ramen-all-you-can deal. When it first opened last March, it was a hit among ramen fans. Every Monday, Wednesday, and Friday from 6 p.m. to 9 p.m., we serve tonkotsu, miso, and tantanmen without MSG.
Waterfront Mactan brings ramen to the streets with a twist! Mamen is a combination of ramen and mami noodles. To make it really Filipino, classic favorites such as ‘Boy Mamen (adobo), Baka Mamen (beef pares), Chicks Mamen (chicken katsu), and Lomen (lomi) are included. Rice bowls with toppings of native Cebuano staples like humba de ronda, balbacua, and crispy lechon dinuguan have joined the mamen menu.
These savory bowls will only be served at the Liberty Shrine from 4 PM to 10 PM during the Lapu-Lapu City’s Kadaugan Sa Mactan Food Festival, which will take place from April 18 to 23, 2023.
Wasay-Wasay
In honor of Earth Day, Waterfront Mactan focuses on reducing one’s food footprint. A foodprint quantifies the environmental impacts of food production, transportation, and storage. Wasay-wasay (black lip oyster), often known as “axe-axe,” is a Bantayan Island seafood specialty.
Executive Chef June Fernandez of Waterfront Mactan, a Bantayan Island native, reintroduced this as a menu feature for its outdoor barbecue dining event, Turo-Turo, Filipino Barbecue Feast. In honor of Datu Lapu-Lapu Day, the wasay-wasay was made with pre-colonial cooking traditions such as sugba, tuwa, and kinilaw.
Turo-Turo literally means “point-point”. This is how you cope with it by deciding what you want the chef to cook for you. Turo-Turo offers a wide range of Filipino BBQ favorites from land to sea. From comfort and familiar basic classics to Mindanao-style marinated satays, we’re experimenting with diverse palates. Chef June is very hands-on when it comes to acquiring fish. He ensured that the shells were fresh and procured locally from fishermen on Bantayan Island.
Wasay-wasay is available at the Turo-Turo, every Thursday to Saturday, from 6 PM to 10 PM.
