As a foodie, one of the things I love most about traveling is discovering a place through its food. There’s something special about sitting down to a meal and tasting the stories, traditions, and memories that make every region unique.
But what if you could travel across the Philippines without leaving your dining table?
That was exactly the experience I had at The Flavors of LuzViMinda at CAFÉ bai, a special culinary collaboration with 7 Flames, a collective of celebrated chefs passionate about showcasing the best of Filipino cuisine.

Bringing together the flavors of Luzon, Visayas, and Mindanao, this buffet was a delicious reminder of just how diverse our local food culture is. From familiar comfort food to regional specialties that deserve more recognition, every station offered something worth exploring.

And knowing me, I wasn’t about to let the opportunity pass without going back for a few favorites!
Meeting the Chefs Behind the Flavors
Beyond the food, one of the highlights of the event was meeting the culinary talents behind this celebration of Filipino cuisine. The gathering featured Chefs Zheryl Jacinto, Mac Dowell Labrador, JR Royol, Melisa Rocha, Richard Gomez, and Welly Rosales.
Listening to them talk about their favorite recipes, the dishes they love preparing, and their experiences in the kitchen made me appreciate the food on a deeper level. There’s so much more to a delicious dish than the ingredients on the plate. Sometimes, the most meaningful part is the story behind it and the people who continue to keep those traditions alive.
What stood out to me was their shared passion for bringing Philippine cuisine to a wider, even global, audience while remaining faithful to our local ingredients and culinary heritage. And honestly, that’s something worth celebrating.
Filipino food has so many wonderful stories to tell, and it’s always exciting to see chefs giving our regional specialties the spotlight they deserve.
Luzon: Rich, Hearty, and Full of Flavor
Let’s start with Luzon, where three dishes immediately caught my attention: Laing, Pork Sisig na Kapampangan, and Sinugno na Gata na Laman Dagat.
I’m a sucker for dishes with rich, comforting flavors, so the seafood cooked in creamy coconut milk was easily one of my favorites. The sauce was so good that I paired it with my sinaing na mais, and before I knew it, one bowl of rice wasn’t enough.

Yes, I went back for another serving. Blame it on the ginataan!
The combination of coconut cream and seafood made every bite satisfying, while the laing offered another taste of that unmistakable Filipino comfort food goodness. And if you’re someone who enjoys bold, savory flavors, the Kapampangan-style pork sisig is another dish worth checking out.

These are the kinds of dishes that remind me why Filipino cooking is so satisfying. We know how to make familiar ingredients shine with flavors that keep us reaching for another spoonful.
Visayas: Comfort Food That Tastes Like Home
As a Cebuana, I have a special soft spot for Visayan food. There’s a certain comfort in dishes that remind you of family gatherings, long lunches, and meals shared around the table.
CAFÉ bai’s signature Humba and Bam-i brought back those familiar feelings.
One spoonful was enough to take me back to family lunches at my grandmother’s house decades ago. You know that feeling when a dish suddenly brings back a memory you haven’t thought about in years? That’s what these two dishes did for me.
The humba was a comforting choice, while the bam-i made a lovely partner to the rich, savory flavors. Together, they made a combination that felt both familiar and satisfying.

Sometimes, the best food memories aren’t about fancy presentations or complicated recipes. They’re about the dishes that remind us of home and the people we shared them with. And for me, this Visayan pairing definitely delivered that kind of nostalgia.
Mindanao: Bold Flavors Worth Exploring
Mindanao brought another layer of flavor to the buffet, with dishes that offered a delicious glimpse into the region’s rich culinary traditions.
The Piyanggang Manok and Simanok were among the dishes that caught my attention, bringing familiar flavors to the table. I also enjoyed exploring the Beef Tsaptsai and Beef Piyasak, which offered bold, layered flavors that made me want to return for another serving.
What I love about a regional buffet like this is that it encourages you to move beyond your usual favorites. You get to revisit dishes you already enjoy while discovering other preparations that might not always find their way into your everyday meals.

And that’s part of the fun of food exploration: you arrive with your cravings, but you might leave with a new favorite.
A Little Surprise: Warm Taho Served Tableside!
Now, here’s a little detail that made the experience even more memorable.
While I was in the middle of enjoying my lunch, I was pleasantly surprised to see a server going from table to table, offering freshly prepared, warm taho! Instead of having to line up at a dessert station, guests could enjoy this familiar Filipino treat right at their tables.
As someone who appreciates the little touches that make dining special, I loved this! There’s something comforting about warm taho, with its soft silken tofu and sweet syrup, that instantly brings back memories of childhood merienda.

It was a simple gesture, but it added a lovely touch of Filipino hospitality to the meal. And really, who says you need to wait until dessert to enjoy a little taho? It’s these unexpected moments that make a buffet feel more personal and memorable.
My Favorite Part? Creating My Own Filipino-Inspired Dessert Bowl!
If you’ve been following my food adventures, you probably know that dessert is always something I look forward to. And when there’s gelato involved, you can count me in!
One thing I enjoy about dining at CAFÉ bai is the opportunity to build your own dessert bowl. Instead of settling for a ready-made combination, you get to choose your toppings and create something that suits your sweet tooth.
For this visit, I started with a scoop of Ube Halaya Gelato and decided to give it a distinctly Filipino twist.
My toppings of choice? Binangkal, masi, and fried banana.

Was it a little experimental? Maybe. Was it worth trying? Absolutely! YOU MUST TRY IT!
I loved the contrast of textures and flavors. The gelato brought a creamy, sweet ube goodness, while the binangkal added crunch, the masi contributed a chewy texture, and the fried banana rounded everything out with another layer of sweetness.

It was a playful combination that brought together familiar Filipino merienda favorites in one bowl.
I always enjoy desserts that allow me to get creative, especially when local ingredients and treats are involved. This one was a sweet reminder that Filipino flavors aren’t just meant for savory dishes. They can be just as delightful when reimagined in a dessert.
The Flavors of LuzViMinda: More Than Just a Buffet
What made The Flavors of LuzViMinda at CAFÉ bai special for me was how it brought together more than just food.
It celebrated the distinct culinary identities of Luzon, Visayas, and Mindanao while reminding diners of the traditions, memories, and stories that connect us as Filipinos.
From the rich coconut-based dishes of Luzon to the comforting Visayan favorites that reminded me of home, and the bold offerings from Mindanao, every station gave me another reason to appreciate the incredible diversity of Philippine cuisine.
And that’s one of the things I love most about food. It has a way of connecting us to places and people, even when we’re simply enjoying a meal in the city.
As a Cebu-based foodie, I especially appreciated the opportunity to revisit familiar regional flavors while exploring dishes from other parts of the country—all in one dining experience.

I left CAFÉ bai with a full stomach, a happy heart, and a renewed appreciation for the people who continue to preserve and celebrate our culinary heritage.
If there’s one thing this experience reminded me of, it’s that you don’t always have to travel far to discover something wonderful. Sometimes, a delicious journey across the Philippines is waiting for you right at the buffet table.
